This quick and easy Strawberry Bellini is the ultimate celebration cocktail! Two simple ingredients combine for a refreshing sparkly drink to make your celebration complete.
How do you feel about cocktails?
The average cocktail you get served at a bar usually contains a medley of some type of distilled liquor as its base then mixed with other ingredients like juices and simple syrups. Not the best if you’re trying to minimise your sugar intake.
This elegant yet simple strawberry bellini, which as I now understand is named Rossini, is 100% indulgent and uses fresh strawberry puree instead of a sugary syrup. And that my friend is already a healthy choice!
How to make a Strawberry Bellini
Believe it or not you only need two ingredients to make this bellini cocktail.
- strawberry puree
- Prosecco or as I have used rose champagne. Champagne is commonly used in place of Procecco as it can be difficult to find depending on where you live.
Start with fresh strawberries and puree them in a food processor or blender
Strain strawberry puree. You do not want the pulp or those fine seeds in your cocktail, trust me.
Step 3 = two options
Option 1 : Combine all of the strawberry puree with the whole bottle of alcohol (Prosecco or champagne) in a large pitcher and distribute between glasses.
Option 2 : Add 1 tablespoon of strawberry puree to a glass then slowly pour in the alcohol (Prosecco or champagne)
Storing your leftover Rossini
If you find yourself with leftover strawberry bellini I suggest pouring it into a flip top glass bottle. This should retain some of the carbonation. Make sure to leave some space in the bottle however so it doesn’t explode on you when you open it up 🙂
Funny story … My daughter saw this bottle of bellini in the fridge and thought it was kombucha. Poured herself a glass and spit it all out after the first sip.. lol
On occasions like Valentine’s Day, Mother’s and Father’s day my family normally does a big brunch celebration at home. And although every family member has a different idea of the perfect brunch I’ve found a way to make it work!
- For my husband who feels no brunch is complete without eggs I’ll serve this creamy swiss chard and eggs dish.
- For my daughters it isn’t brunch if there’s no pancakes, so I’ll delight them with pancakes cut into heart shapes smothered with homemade almond butter and chia seed jam and babyccinos to wash it down.
- In my opinion it shouldn’t even be called brunch if you are not serving some sort of champagne cocktail so, I will be thrilled just seeing the smile on their faces with a glass of this strawberry bellini in my hand.
After brunch we usually crawl onto the couch and watch a movie while I secretly hope my Fairy Godmother pops in and cleans up the mess that is the kitchen. Sigh…
- 1 bottle Rose champagne or Prosecco
- 2 cups strawberries washed and hulled
- Puree strawberries in a blender or food processor.
- Strain through a sieve. Reserve strawberry juice, discard pulp or save for using in smoothies.
- Combine strawberry juice with champagne in a large pitcher.
- Divide among champagne flutes.
