Whenever I feel like I’m coming down with something, a sore throat is usually my first clue. My natural instinct is to reach for bone broth – it’s nutrient-rich, soothing, and basically a warm, drinkable meal.
But sometimes broth on its own just isn’t enough. I want a little more substance, something that still feels light but gives me that extra umf. This light mushroom soup brings the two together: the comfort of broth with the depth of mushrooms, in a way that’s easy on the stomach yet so satisfying.

Equipment
- 1 Large soup pot or Dutch oven
- 1 Wooden spoon
- 1 Knife
- 1 cutting board
- Blender or immersion blender (optional, for creamy version)
Ingredients
- 2 tbsp olive oil or ghee
- 1 medium onion chopped
- 500 g mixed mushrooms button, shiitake, king oyster, beech
- 6 cups bone broth
- 2 sprigs fresh thyme or ½ tsp dried
- salt + black pepper to taste
- fresh parsley or extra thyme to garnish Optional
Instructions
- Heat oil/ghee in a large pot over medium heat. Sauté onion until softened, 4–5 minutes.
- Add mushrooms. Cook until mushrooms start to brown, and all the liquid is evaporated.

- Pour in bone broth, add thyme, and bring to a gentle simmer. Cook 20 minutes to allow flavors to meld.

- Season with salt and pepper.
- Serve hot, garnished with parsley or thyme.
