Tomato tostadas are also served as a snack or for tapas. If you order it in a bar or cafe, you will usually get a sliced, toasted baguette with a small bowl of mashed tomatoes a bottle of olive oil and some salt. Sometimes people rub garlic or aioli onto the toast before the oil is added.

You can easily recreate this at home. It’s quick, simple and tasty. All you need to do is cut a tomato in half and grate it into a bowl. The pulp will come out easily and you’ll remain with the skin. You can even grate a big batch and store it in a glass jar in the fridge.

Ingredients

  • 1 tomato
  • olive oil
  • bread
  • salt to taste

Instructions

  • Toast your bread. If using freshly baked bread skip this step.
  • Prick holes in the bread to help the olive oil soak in.
  • Drizzle on the olive oil.
  • Cut the tomato in half, and grate over the toasted bread. The pulp will grate easily and you'll remain with the skin.
  • Sprinkle on salt to taste.
