Applesauce Muffins (gluten free, vegan)

Healthy Applesauce Muffins just cannot be beat. Made from whole grain gluten free flours, homemade applesauce and grated apples these healthy applesauce muffins will last up to one week in the fridge as they contain no eggs, no dairy or other perishable ingredients.

Ingredients

Dry

  • 1 cup buckwheat flour
  • ½ cup cup brown rice flour
  • ½ cup almond flour
  • 2 eggs or 2 flax eggs (2 tablespoons flax meal+6tablespoons water)
  • 2 tablespoons Apple Pie Spice mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon psyllium husk powder
  • ½ teaspoon pink himalayan salt

Wet

  • 1 cup grated apple approx 2 small apples
  • 1 cup applesauce
  • ½ cup honey
  • cup extra virgin olive oil
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  • Heat oven to 356F / 180C
  • Line 6 cup muffin pan with silicone muffin cups
  • Mix dry ingredients in a large bowl
  • Combine wet ingredients in a medium sized bowl until smooth
  • Add wet ingredients to dry
  • Mix gently by hand until combined
  • Evenly divide batter among muffin cups
  • Bake for 20 - 25 mins, or until the top is golden brown and a toothpick comes out clean when muffins are pierced
