Buckwheat Granola

This buckwheat granola is the perfect on the go gluten free nutrient dense breakfast or snack!!

Ingredients

  • 2 cups buckwheat groats
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ½ cup shredded coconut
  • ½ cup cranberries
  • 1 very ripe banana mashed
  • 2 tablespoons coconut oil
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • pinch of salt

Instructions

  • Preheat oven to 300 degrees F.
  • Line a baking sheet with parchment paper.
  • Combine all ingredients in a large bowl.
  • Mix until coated evenly.
  • Spread the mixture out onto the baking sheet and cook for 20-25 minutes, stirring occasionally. Keep a close eye on it so it does not burn.
  • Remove from heat.
  • Cool for about 15 minutes, and then break into chunks. Store in an airtight container or resealable bag.
