How about a post workout popsicle? Following on how to create the perfect post workout shake I have a post workout popsicle that will provide you with all the protein and carbs you need to replenish after your workout. It’s refreshing, delicious and does not contain a speckle of processed protein powder.. 😉 During the summer I much prefer to workout indoors at the gym where it’s nice and cool but as soon as I step outside into the 40 degree Spanish heat I feel like I’m about to melt. I find solace  just knowing that I have one of these popsicles waiting for me at home in the freezer.

These popsicles are extremely easy to whip up. If you can make a smoothie, you can make these!

How to make this Blueberry Cheesecake popsicles

In a blender add the cottage cheese, yogurt, milk and vanilla. Blend until smooth.

Pour ¾ cup /300 ml  cups of the yogurt/cheese mixture into a separate container and set aside.

Add the blueberries, lemon juice and blueberry lavender syrup to the the remaining yogurt mixture. Pulse until smooth.

 

Pour the blueberry puree into the popsicle moulds, filling them to about 1/3 of the mould. Freeze until the mixture begins to set, about 30 minutes. Fill the rest of the mould with the yogurt/cheese mixture. Cover and insert the popsicle sticks. Freeze for 4 hours or overnight, until they are hard.

I got my popsicle molds at IKEA but since it seems I’ll be making a lot of popsicles this summer I’m planning to buy these Zoku Pop Molds. I had a bit of the yogurt/cheese mixture left over so I froze it in ice cube trays and I’ve been adding them to my smoothies.

These popsicles aren’t only great post workout they’re an excellent snack for the whole family!

Ingredients
  • ½ cup / 125ml nut milk
  • ½ cup / 125ml Greek yogurt
  • ½ cup / 125ml cottage cheese
  • ¼ cup / 60g blueberries
  • 2 tablespoons raw honey
  • 1 tablespoon lemon juice
  • 1 tablespoon lavender syrup
Instructions

If the popsicles won't release from the mold run them under hot water for about 10 seconds.

    Cottage cheese or cream cheese? The recipe at the bottom says cottage cheese, just want to clarify, thanks!
